Granola recipe

This is a very simple recipe for those of us who looks for a healthy option to the comercial cereals and mueslis that carries lots of sugar, it is a very rich and healthy option. It can be eaten for breakfast, in milk, in yoghurts, or on top of fruit… once you taste it you won’t be able to stop making it and it will be a must in your pantry.

Ingredients

  • whole oat flakes two bowls
  • Dried fruits: hazelnuts, cashew nuts, walnuts, almonds, those you like the most but never fried, you must use the roasted or raw options. one coffee cup of each.
  • Chia, poppy, flax and sesame seeds. You will find commercial options with the mix of all of them or just take those that you prefer and use half a cup. My recommendation is to grind the seeds in order to absorb better their nutrients.
  • If you use pumpkin and sunflower seeds, remember to use it raw, not fried. Half cup.
  • Coconut flakes, quarter cup.
  • Raisins, Goji berries or dried cranberries, always WITHOUT added sugar, half a cup.
  • Two heaping tablespoons of powdered cinnamon.
  • coconut oil tablespoon.
  • A large glass jar for storage.

Procedure

The first thing to do is to cut up the nuts, either in blender or the food processor. I like them at medium sized pieces so it will feel crunchy, don’t let them crush completely or you will loose the crunchy taste. You need a large frying pan to cook all togheter. Grease the pan using coconut oil tablespoon and pour in all the ingredients except berries, blueberries or raisins. Set medium heat and move it around from time to time so that it roasts well on all sides, but you have to be very careful to don’t burn it because it will taste bitter. You will notice how the color change to a darker color and how the seeds burst. It will be ready in 10 minutes. Once ready remove the pan from the heat and add the berries, raisins, blueberries and so on. Stir to mix everything. Put it into the jar but so not close it till it gets cold to avoid condensation makes it sofen and keep its crispness. If you love cinnamon do not doubt to add more on it. Those are recommended quantities, but you may like it without coconut, or with more nuts. Tell us how you made it, maybe you can give us some new ideas.
